For the included Janson, start at 91°C with 15 g coffee. Rinse the Abaca filter, level the grounds and gently pour a 50 g bloom over 10 seconds. Wait 40–90 seconds, then pour centrally over 30–40 seconds to 225–250 g total. Swirl gently. Target 2:00–2:40 and let the cup cool before assessing it.
