The producer & process
Lot 980 comes from the Janson family’s Alpes farm in Tizingal, at 1,700 meters. Ripe cherries were depulped, fermented for 96 hours in a controlled environment, fully washed, and patio-dried for six days. The family estate was established in 1941 and is now operated by its second and third generations.
Swedish immigrant Carl Janson established the estate in 1941. Today, its second and third generations work the slopes of the Talamanca range, where the local microclimate and volcanic soils near Barú shape the coffees. Quality-led planting, including Green Tip Geisha, has brought repeated high placements at Best of Panama.
The farm uses 400 solar panels and water-conscious processing, and maintains a private forest reserve for wildlife habitat. Janson also reports bird-friendly certification.
Ripe cherries from the Alpes farm in Tizingal were depulped, fermented for 96 hours in a controlled environment, then fully washed. Patio drying lasted six days.
Our standard pour-over starts with 15 g of coffee and 240–250 g of water at 88–92°C. Adjust for your grinder and the coffee’s time off roast.
Leave the bag sealed for at least two weeks after the roast date. Most of our coffees taste best around four weeks after roast.
