Farm, Lot and Process Details
This specific lot, 980, comes from the Janson's Alpes farm in the Tizingal region, grown at a high elevation of 1,700 meters. After harvesting, the perfectly ripe Green Tip Geisha cherries were depulped and then placed into a controlled environment for an extended 96-hour fermentation. After this intensive stage, the coffee was fully washed to remove any remaining mucilage and then carefully dried on patios for 6 days. This combination of extended fermentation and classic washed processing creates a stunningly clean yet intensely fruity and complex cup profile.
Producer and Region Details
Janson Coffee Farm is a family-owned estate first established in 1941 by Swedish immigrant Carl Janson. Now operated by the second and third generations of the Janson family, the farm is a model of quality and environmental stewardship. Located on the slopes of the Talamanca mountain range, the coffee benefits from a unique microclimate created by the volcanic soil of the nearby Barú Volcano.
The Jansons are true pioneers, consistently placing in the top ranks of the prestigious Best of Panama auction. Their philosophy is centered on quality, which is why they only plant renowned varieties like Green Tip Geisha. Their commitment to the environment is equally impressive; their farms are powered by 400 solar panels, water is conserved through innovative processing techniques, and a significant portion of their land is maintained as a private forest reserve, making it a sanctuary for local wildlife and a certified bird-friendly farm.
