The producer & process
This washed Gesha comes from Yangui Coffee Farm in Tafuye, Alishan, at 1,250 meters. Harvested on April 27, 2026, the cherries rested in a tank for 18 hours before depulping and 24 hours of underwater fermentation. After washing, the coffee dried for seven days in a temperature-controlled room at 33–35°C, then was stored in parchment at 17°C.
The Poitsonü family grows coffee and tea in Tafuye, Alishan. Fa’ei Poitsonü, also known as Han-Wen Pu, leads the coffee operation alongside his family. Yangui is named for his mother in the Tsou language. A natural Gesha from Yangui placed 12th in Taiwan’s 2025 Cup of Excellence; this washed selection is from the family’s 2026 harvest.

Our standard pour-over starts with 15 g of coffee and 225–240 g of water at 88–92°C. Adjust for your grinder and the coffee’s time off roast.
Leave the bag sealed for at least two weeks after the roast date. Most of our coffees taste best around four weeks after roast.
